If you really want to taste best parathas (kneaded dough with spices) along with vegetables and dal, then you head straight to Parathe Wali Gali (Street of Parathas) in Chandni Chowk, Delhi. This place is teeming with activities and many people would not like to miss this part of town on their trip to Delhi. The street is quite narrow with small and simple restaurants on either side of the lane. Apart from the parathas there are other delicacies available such as samosas and jalebi (a type of Indian sweet). Many of the restaurants have been in business since three centuries with the art of making parathas passing from one generation to the next. Heat some water and steam the broccoli florets until just cooked. You should just be able to stick a fork into the side of the florets but there should be some resistance. Set aside.
 

 


Another variation is the Luchi. Using the same dough as the Puri, it usually more than 2 feet across, sometimes nearly a meter in diameter. Many people with cholesterol issues express worry and concern about taking ghee because it is made from butter. This concern is understandable, but misplaced. ghee is the oil of butter. It is what is left after the heavy fats of butter are removed. Ghee is the lightest oil known to mankind. It is lighter than flax oil, read more olive oil, almond oil, and coconut oil. There is extensive research done which proves that ghee actually reduces cholesterol rather than increasing it.

One of my biggest calorie savers is to swap fried rice for pilaf rice or boiled rice. This will save you hundreds of calories and around 25 grams of fat. This small change on rice emphasizes the importance of healthy food choices. By choosing the fried rice your body is subject to 25 grams of extra fat and 400 extra calories.

Choose naan or chapatti over paranthas or puris. These breads are usually fried. Make sure you ask the naan or chapatti to remain plain, that is not to add any ghee or butter to them. All Indian desserts are high in sugar and fat like most other desserts. If you must have a dessert, then make sure it is a small portion only.
